What You Will Need

- 1 Handheld Mixer
- 2 Mixing Bowls
- 1 Set Measuring Cups
- 1 Set Measuring Spoons
- 1 Cont. Parchment Paper
- 1 Loaf Pan
- 1 Spatula
- 1 Whisk
INGREDIENTS
- 2 ripe Bananas
- 1 can Pumpkin puree
- 1/2 cup White sugar
- 1/2 cup Brown sugar
- 1/2 cup Vegetable Oil
- 2 large Eggs
- 2 tsps Vanilla extract
- 2 cups Flour
- 2 tsps Pumpkin pie spice
- 1/2 tsp Cinnamon
- 1 tsp Baking soda
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1/4 cup Crushed Pumpkin Pie Granola
Step 1: Preheat Oven to 350°
Preheat Oven to 350°. In a medium bowl, mash bananas with handheld mixer (or by hand) and mix in canned pumpkin.
Step 2: Mix in Remaining Wet Ingredients
Add the oil, sugars, eggs & vanilla extract to banana/pumpkin mix and mix with handheld mixer until smooth.
Step 4: Mix Dry Ingredients and Combine with Wet Ingredients
In a separate medium bowl, whisk together dry ingredients, flour, pumpkin pie spice, cinnamon, baking soda, baking powder & salt.
Combine wet ingredients with dry ingredients until smooth and combined.
Step 5: Pour in Loaf Pan and Bake for 60 Minutes
Line loaf pan with parchment paper and pour in batter, smoothing out the top with a spatula. Sprinkle top of batter with crushed granola.
Bake for 60 minutes in oven at 350°. Should be done when toothpick comes out clean and top is firm to the touch. If the top is brown too quickly add a tented piece of foil around the 40-50 minute mark.
Step 4: Cool, Serve and Enjoy!
Let cool before slicing and serve with butter.
You can wrap in saran wrap and freeze for a later date if making this in advance or for someone as a gift!
