Homemade Banana Bread
Fresh banana bread reminds me of home. My Grandma Charlotte made this homemade banana bread for us when we were young and today it's my kid's favorite breakfast!

  • 4 bananas, mashed
  • 2 cups sugar
  • 3 eggs, beaten
  • 1/2 cup vegetable oil
  • 1/3 cup buttermilk
  • 2 cups flour
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts (optional)

Step 1: Preheat Oven to 350° and Prep

Pre-heat the oven to 325° for a convection oven or 350° for a regular oven. Grease two 8 x 4 mini loaf pans. My Grandma Charlotte uses these foil pans. They are the perfect size and the bread turns out perfect. You also could easily wrap for a delicious gift for a host, teacher, friend, new neighbor, etc.

Peel and mash bananas with a hand or stand mixer

Step 2: Mix all Ingredients

Combine bananas and next 7 ingredients in medium bowl, mix well.

You’ll see the recipe calls for buttermilk, I typically do not have buttermilk in my fridge. You can easily make buttermilk from regular milk you likely have in your fridge. Combine 1/3 cup milk and 1/3 tablespoon white vinegar or lemon juice. Mix and you have buttermilk!

Fold in walnuts with spatula.

My Grandma Charlotte would say nuts are not optional! However when making for kids or if concerned about allergies, you may want to skip the nuts. Since the recipe calls for two loafs, I often fill one pan then add 1/c cup nuts to the remaining mixture and make one loaf with and one without.

Or change things up and add 1/2 cup of chocolate chips for a delicious treat. When I make with chocolate chips I combine 1/2 cup into the mix. After filling pans, I also top with a few more chips on top.

Step 3: Fill pans and Bake at 350° for 1 hour

Spread batter in two greased 8 x 4 mini loaf pans. Bake at 350° for 1 hour. Check at 50 minute mark with tooth pick in the center of the loaf. Bread is ready if the toothpick comes out clean.

Step 4: Cool, Serve and Enjoy!

Remove bread from pan and let cool before slicing. My family serves with a pat of butter.. yum!

If you do not need both loafs right away. Cut one loaf in slices, wrap in saran wrap and freeze!

Make this recipe with your kids! They will love to mash the bananas, it is so easy and they also will love the end result!

  • 1 Spatula
  • 2 8 x 4 inch small loaf pans

Ingredients
  

  • 4 bananas, mashed
  • 2 cups sugar
  • 3 eggs, beaten
  • 1/2 cup vegetable oil
  • 1/3 cup buttermilk
  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 1 tsp vanilla
  • 2 cup walnuts, chopped *optional

Instructions
 

  • Pre-heat the oven to 325° for a convection oven or 350° for a regular oven. Grease two 8 x 4 small loaf pans. 
  • Peel and mash bananas.
  • Combine bananas and next 7 ingredients in medium bowl, mix well. 
  • Fold in walnuts with spatula. 
  • Spread batter in two greased 8 x 4 small loaf pans.
  • Bake at 350° for 1 hour. 

Notes

Optional, replace walnuts with 1/2 cup chocolate chips
