Strawberry Brown Sugar Cobbler
This delicious and easy brown sugar strawberry cobbler will melt in your mouth with a crisp chewy crunch on top and warm buttery inside, it pairs perfectly with vanilla ice cream!

I took my son to pick fresh berries as a fun activity at Lewis Farms and was left with a whole bucket of strawberries! Throwing them into a cobbler makes for such a delicious and easy way to ensure they do not go bad before you can eat all of them. You really can sub any fresh berries of your choice and this is a great recipe to do with kids!

My son may have been more into the dirt than the berries but it sure was fun to see him learning something new! I highly recommend berry picking with family and friends and rewarding yourself with this delicious treat!

Step 1: Preheat the Oven and Slice Strawberries

Preheat the oven to 375° F. Melt 8 tablespoons salted butter into a 9×13 inch baking dish by placing the dish in the oven to melt. It should take about 10 minutes.

Throughly rinse and slice strawberries, measuring out 5 cups in a bowl. Toss with 3 tablespoons maple syrup and 2 tsps corn starch. I used Vanilla Bean Infused Maple Syrup and it was delicious, I highly recommend!

Step 2: Mix Batter and Layer with Fruit in Baking Dish

In a separate mixing bowl, mix together flour, kodiak packets, 1/2 cup brown sugar, and baking powder. Use cheese grater to shred 4 tablespoons butter and add to mix with milk and vanilla. mix everything together until just combined.

Pour half the strawberries over the melted butter in the baking dish. Then, layer the batter overtop, do not mix. Pour the remaining strawberries on top of the batter. They may sink in and that is ok, do not mix.

Step 3: Bake for 55-60 Minutes

Bake 55-60 minutes, until the top becomes golden brown and the brown sugar carmalizes on the edges. I prefer mine a little more on the crispy side, as the inside is soft and gooey.

Step 4: Serve Warm with Vanilla Ice Cream

Scoop desired amount into a bowl and serve warm with vanilla bean ice cream and brown sugar crumbles. If you like more of crunch I would sub brown sugar crumbles for crushed Maple Brown Sugar Bars or granola or add a little of both! This is a dessert after all, let’s get crazy!

  • 1 9 x 12 Casserole Dish
  • 1 Knife
  • 1 Cutting Board

  • 1 Cheese Grater

Ingredients
  

  • 5 cups Sliced Strawberries
  • 2 tsp Corn Starch
  • 1.5 packets Kodiak Strawberries and Cream Oatmeal
  • 1 cup Flour
  • 1/2 cup Brown Sugar
  • 3 tbsp Vanilla Bean Infused Maple Syrup or Regular Maple Syrup
  • 12 tbsp Cold Salted Butter
  • 1 cup Milk of Your Choice
  • 1 tsp Baking Powder

Brown Sugar Crumble Topping (Optional)

  • 1/2 cup Flour
  • 1/2 cup Brown Sugar
  • 4 tbps Slightly Melted Salted Butter
  • 1/2 tsp Ground Cinnamon

Instructions

  • In a separate mixing bowl, mix together flour, kodiak packets, 1/2 cup brown sugar, and baking powder Add 4 tablespoons shredded butter, milk and vanilla, and mix together until just combined.
  • Pour half the strawberries over the melted butter in the baking dish. Then, layer the batter overtop, do not mix. Pour the remaining strawberries on top of the batter. They may sink in and that is ok, do not mix. Bake 55-60 minutes, until the top becomes golden brown.
  • Scoop desired amount into bowl and serve warm with vanilla bean ice cream and brown sugar crumbles.

Brown Sugar Crumbles

  • In a bowl with a lid (for later storage), mix together brown sugar and flour. Add cinnamon (optional). Slowly pour slightly melted butter into the bowl while stirring the crumbs with a fork. Start with 4 tablespoons and add more as needed until the crumbs form. Do not over-mix (you want it to be clumpy).
  • You can use right away or store in the refrigerator for later use.
