Make these healthy scrambled egg cups for an easy grab and go breakfast or anytime snack, to ensure you start your day off on the right foot!

These are such a quick and easy breakfast you can make ahead for the week or enjoy as a healthy snack any time of day.

Healthy Scrambled Egg Cups

I meal prep these regularly at the beginning of the week and they are a such a big hit in my family! I portion them out in sandwich bags and store in the fridge so my husband can take some with him to work. A couple seconds warmed in the microwave and they are ready to eat.

Preparing healthy grab and go breakfasts are an easy way to ensure you start your day off on the right foot.

The saltiness of the bacon balanced with the sweetness from the peppers make this breakfast snack not only a tasty one but a healthy one at that! And it’s so simple to make!

What You will Need

  • 6 eggs
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 package of bacon
  • 1 package shredded cheese
  • 1 baking sheet
  • 1 muffin tin
  • 1 mixing bowl
  • 1 can spray cooking oil
  • Salt and pepper (Kinder’s is my favorite seasoning!)

Step 1: Precook the bacon

Preheat oven to 400°F, line baking sheet with bacon and cook for 15-20 min or desired crispiness. Flipping half way through.

Step 2: Chop up ingredients

Chop up equal parts peppers, cheese and bacon. I used about a 1/2 a cup for each.

Step 3: Mix all Ingredients together

Mix everything together in a bowl with 6 eggs and don’t forget to season with salt and pepper. I love Kinder’s– salt, pepper, & garlic seasoning. I use it on just about everything.

Step 4: Pour mixture into greased muffin tin

Don’t forget to spray your muffin cups with cooking oil prior to pouring in the mixture.

Step 4: Bake in the oven at 400°F for 12-15 min.

Once the top of your muffin cups rise and are no longer runny in the middle they are done.

Step 4: Let cool and serve

Let egg cups slightly cool, pop them out of the muffin tins with a spoon and serve to enjoy warm or store in an airtight container to store in the fridge.

You can reheat in the microwave for 30 seconds if storing in the fridge.
